This beautiful spring flower is not only used medicinally as a laxative when prepared as a rich blue concentrated syrup, but is also an edible flower used to decorate cakes and salads. Wonderfully preserved in an egg white wash and coated with sugar it is a Victorian treat, or it can be dried to be used in teas. Bonus points for Latin name!
